Quick and Healthy: The Best Paleo Banana Nut Bread EVER!

Valerie discovered this Paleo Banana-Nut bread the other day and we’ve already made it twice this week.  It is A-MA-ZING.  And it’s really easy to make.  All you need is:

  • Almond Meal (1 cup)
  • Coconut Flakes (1/4 cup)
  • Baking Soda (1/2 tsp)
  • Baking Powder (1/2 tsp)
  • Bananas (3 small-medium, ripe, mashed)
  • Natural Maple Syrup (1 tsp)
  • Cinnamon (2 tsp)
  • Eggs (2, omega 3 enriched if possible)
  • Vanilla Extract (1/2 tsp)
  • Walnuts (1 cup chopped/crumbled)

Serves 4.  Nutritional Value for entire loaf is:

Calories for loaf

Tip:  Add extra walnuts for more crunch.

    Whats up man. I’m at work so I will respond to your email later tonight but wanted to let you know I made this banana nut bread last night. First time making something like this from scratch….dude…it is awesome…texture/taste/smell….ha all so good. Interestingly enough I mistakenly bought Pecans rather than Walnuts but it was delicous. I also made this chicken curry adding some extra vegetables than it calls for but you may like this recipe…http://www.mypaleokitchen.com/archives/267 . Keep up the good work man and keep feeding some simple recipes here…im loving it. Trying the pizza recipe tonight.

      Thanks for the chicken curry recipe, I’ll definitely check it out. I have a sweet potato-pumpkin curry recipe that is good that I’ll post soon too. Also, have a giant post on the “future” of FreeFit as I see it, and how it could be a presence in the local community. It’s gonna be long, but worth the read I think ;).

      If you are doing a 30 day Paleo-challenge and trying to be 100% strict, then I agree, I would stay away from Maple Syrup. However, when looking at possible Paleo-friendly sweeteners, most people out there will either use Maple Syrup or Honey. A quick look through Paleo Recipe blogs will show this. Personally, I find that a couple spoonfuls of Maple syrup added to a once-in-a-while treat is harmless as long as you have good glucose metabolism (i.e. are Insulin sensitive). It’s all about the 80/20 rule. Don’t let perfect be the enemy of good. If you DO want a little treat, the ingredients in this Banana Nut Bread are the closest thing we can get to unprocessed, natural food (Maple Syrup comes from trees).       More recent research from the likes of Mat Lalonde and Robb Wolf also point to Fructose as possibly a major culprit in metabolic syndrome. However, small doses won’t send you over the edge unless you already have a problem.
