Quick and Healthy: Marinated Summer Salad

This is a quick recipe that Valerie whipped up for “Paleo Feast and Treats” night with some of my clients.  It’s an easy salad that is delicious on it’s own or over greens (we used baby leaf).

Simply slice cucumber, red onion, and cherry tomatoes, put in a bowl, and then add 2 Tbs of Garlic Olive Oil for every 1 Tbs of White Whine Vinegar (until the veggies are well covered).  Top it off with a bit of sea salt, freshly cracked black pepper, and dill, toss it together, and let it sit in the fridge for a couple hours before serving.

Quick and Healthy: Paleo Meatloaf

Full of savory, subtle flavor, this hearty meatloaf is sure to satisfy!  Valerie’s rating:  Gloriouuuus! 🙂

What you Need:

  • Ground Beef (1 lbs)
  • 2 apples (peeled, cored, and chopped)
  • 1 onion (chopped)
  • Garlic, 1 clove (minced)
  • Dried Mustard Powder (1 tsp)
  • Worcestershire sauce (2 Tbsp)
  • 1 egg
  • Salt and pepper to taste

What to Do:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine all ingredients (you can use your hands to mix if you want!).  Press mixture into pre-greased (we used coconut oil) pan.
  3. Bake for about 30 minutes.

Quick and Healthy: The Best Paleo Banana Nut Bread EVER!

Valerie discovered this Paleo Banana-Nut bread the other day and we’ve already made it twice this week.  It is A-MA-ZING.  And it’s really easy to make.  All you need is:

  • Almond Meal (1 cup)
  • Coconut Flakes (1/4 cup)
  • Baking Soda (1/2 tsp)
  • Baking Powder (1/2 tsp)
  • Bananas (3 small-medium, ripe, mashed)
  • Natural Maple Syrup (1 tsp)
  • Cinnamon (2 tsp)
  • Eggs (2, omega 3 enriched if possible)
  • Vanilla Extract (1/2 tsp)
  • Walnuts (1 cup chopped/crumbled)
